Pizza steel
The single biggest upgrade for a home oven. A slab of steel holds and dumps heat far faster than a stone, so the bottom crisps and chars in the few minutes a home oven can manage. Preheat it hard, an hour, as hot as the oven goes. Where to get one →

Pizza peel
You cannot launch a pie without one. A thin metal launching peel with a bevelled edge slides under a dressed pizza; a small turning peel (or a perforated one) makes the spin mid-bake easy. Dust with semolina and commit — hesitation is what makes pies stick. See options →

Digital kitchen scale
The difference between a pizza you got lucky with and one you can make again. Weighing flour, water, and salt in grams (bakers’ percentages) is how dough becomes repeatable. A cheap scale that reads to one gram is plenty. Where to get one →

Outdoor pizza oven
When you are ready to commit. A portable oven (Ooni, Gozney and the like) hits 850°+ — true 60-to-90-second Neapolitan territory a kitchen oven can’t touch. Gas for convenience, wood for the char. Not required to make great pizza; just the ceiling-raiser. See options →

Finely milled Italian flour built for high-heat, fast bakes — it gives the tender-yet-chewy crust you are after. Bread flour works in a standard home oven; 00 shines once you are baking hot. Buy a few bags; you will use them. Where to get one →

San Marzano-style tomatoes
Good canned tomatoes, crushed raw and salted, are the whole sauce — no simmering, no sugar. San Marzano (or a quality plum tomato) is bright and low-acid. This is the cheapest upgrade on the list and one of the most noticeable. See options →
